This is a simple and effective design for separating eggs. I know – separating eggs isn’t that hard, but I have a couple of recipes that use a large quantity of them and this is just easier. It also keeps the contents of the egg cleaner than tipping them back and forth in the shell – something you should consider if you use fresh farm eggs.The slits allow the white to fall through and I find they just need a bit of a scrape on the side of the bowl to release. The little rubber clip that keeps it sitting on the bowl is just “ok” – it does the trick, and it makes it easy to pick it up and set it back down without a bunch of fiddling, but it makes it sit at a steep angle if you’re using a thicker ceramic bowl.
